Spicy Crunchy Tuna

This is a very popular roll in sushi restaurants.   Many people have a difficult time attempting to replicate this roll mainly because nobody teaches how to get the texture and flavor right.  Here at EZ Home Sushi we aim to teach what others don’t, so here we go!

These are the ingredients you need to make the filling for this roll.  Ground Tuna, sushinoko seasoning, sriracha, unagi sauce and sesame oil.

Add ground tuna into a mixing bowl.  You can find ground tuna at many asian grocery stores, or grind your own in a meat grinder.

Add a generous amount of panko crumbs.  The amount of panko should be almost equal to the amount of tuna.

Add some sesame oil for authentic flavor.

Adding unagi sauce compliments the sesame oil in giving this mixture that authentic sushi restaurant flavor.

It wouldn’t be spicy tuna without the heat.  Add the amount of sriracha needed to reach the heat level you desire.

Add sushinoko seasoning.  This gives the salt, sugar, and vinegar which drowns out the flavor of the fish.  Add until it tastes amazing!

Stir up the mixture.

Keep mixing until the panko changes color to the color of the tuna.

Sample the mixture and add sushinoko seasoning or any other ingredient needed to make the flavor amazing.

Use a half-sheet of nori covered with sesame seeds.

Flip the nori over and add a strip of the filling mixture.

start the first revolution of the roll.

Tighten and shape the roll.

At this point you should have a well-formed uramaki roll.

Cover the roll with plastic wrap.  This helps keep the roll from deforming.  As you gain more experience you may no longer need the plastic wrap.

Carefully cut the roll into eight pieces.

This is a roll you will be asked to make over and over if you serve to friends or family.  Some sushi restaurants serve this version of a spicy tuna roll.  It is usually one of the most commonly ordered items on the menu.  If done correctly there is so much flavor that toppings or sauces are not even needed.
